Colorful, simple, inexpensive and sooo delicious just as it is. Or gourmet it up with a little shrimp or salmon. This is an excellent party pleaser that can be made a day ahead.

Ingredients:

1 cup orzo
3 oz sun dried tomatoes (the ones that are already soft and
don't need hydrating)
1/2 red bell pepper
1/2 yellow bell pepper
1/2 cup ripe pitted kalamata olives
4 oz feta cheese
1/4 cup olive oil
2 - 4 tbsp red wine vinegar (to your taste)
Directions:
  1. Cook and cool the orzo according to the package directions.

  2. Chop the tomatoes, peppers, olives and cheese and add to the orzo.

  3. Make a vinaigrette with the oil and vinegar, adding a little seasoning if you wish. Pour over the orzo and mix all ingredients together well.

  4. If you make this a day ahead, add just a little more vinaigrette before serving.

I made this for our family Memorial Day picnic, without adding shrimp or anything extra, and it was a huge success. So simple to put together as well. This will be my standard covered dish from now on.
