Ingredients:

6 large red, yellow and orange peppers
1/2 cup white rice
1 lb ground beef
1 med onion
3 cloves garlic
1 can (14 1/2 oz) diced tomatoes
1 1/2 cups cheese (cheddar or monterey jack)
1 tbsp olive oil
1 envelope spicy taco seasoning
16 oz frozen sweet white corn
Directions:
  1. Cut the tops off the peppers, leaving the stalk intact but removing the seeds and ribs.

  2. Boil the rice.

  3. While the rice is cooking chop the onion and dice the garlic, then saute together in the oil on a low heat for 5 minutes.

  4. Add the ground beef and continue cooking 'til almost cooked through.

  5. Add the can of diced tomatoes. When the mixture is warmed through put in the taco seasoning (you may need to add a little extra water) and mix thoroughly.

  6. Remove from the heat and stir in the grated cheese and the package of frozen corn.

  7. Generously fill each pepper with the meat mixture then put the top back on.

  8. Bake in a covered dish for 1 hour at 350F.
