Make a sauce by gently heating the jam with the juice from the lemon. It should be sharply sweet.
Let cool and toss in the chopped beets.
Serve in a fringe of lettuce.

I tried this yesterday because it was so quick and easy and it was surprisingly good. My husband loved it. For a hot day it was a refreshing accompaniment to cold chicken.
