Ingredients:

1 lb plain cooked beets, chopped
2 tbsp seedless blackcurrant jam
1/2 lemon
Directions:
  1. Make a sauce by gently heating the jam with the juice from the lemon. It should be sharply sweet.

  2. Let cool and toss in the chopped beets.

  3. Serve in a fringe of lettuce.

I tried this yesterday because it was so quick and easy and it was surprisingly good. My husband loved it. For a hot day it was a refreshing accompaniment to cold chicken.
