Strain, add the butter, then mash 'til really smooth. (Don't add milk).
Set aside to cool for 5 minutes.
Add the egg yolks and seasoning to the potato mix and beat well.
Pipe the potato into circles on a large, non-stick baking sheet.
Bake for 20 minutes at 375F or until the potato looks crisp and golden.
Meanwhile, saute the beef with a little seasoning. Drain off any excess oil when done. You may also like to add a little tomato paste for added flavor.
When the potatoes are done, plate them and fill the circles with the meat mixture.
