I've used ground beef for a filling here but you can use anything you like. It's a cheap, simple meal that looks like so much more.

Ingredients:

1 1/2 lbs potatoes
3 oz butter
1 - 2 egg yolks
Seasoning
1 lb ground beef
Directions:
  1. Peel the potatoes and boil 'til soft.

  2. Strain, add the butter, then mash 'til really smooth. (Don't add milk).

  3. Set aside to cool for 5 minutes.

  4. Add the egg yolks and seasoning to the potato mix and beat well.

  5. Pipe the potato into circles on a large, non-stick baking sheet.

  6. Bake for 20 minutes at 375F or until the potato looks crisp and golden.

  7. Meanwhile, saute the beef with a little seasoning. Drain off any excess oil when done. You may also like to add a little tomato paste for added flavor.

  8. When the potatoes are done, plate them and fill the circles with the meat mixture.

  9. Serve immediately.
