Ingredients:

8 eggs
2 apples
4 - 5 oz grated cheddar cheese
A little butter
Water
Cinnamon and nutmeg
Salt (preferably sea salt)
Directions:
  1. Slice the apples and saute in butter in a large pan. Set aside but keep warm when done.

  2. Whisk the eggs well with the salt, seasonings and about 3/4 cup of water. (The water will make a lighter omelet).

  3. Melt a little more butter in the pan you used for the apples, pour in your egg mixture and cover with a tight lid. The trick here is to allow the mix to cook slowly without removing the lid so that the omelet will rise.

  4. When the omelet is just about cooked sprinkle the grated cheese on and layer the apples on top.

  5. Don't fold the omelet; just slice and serve.
