An easy Jamie Oliver dish that will really impress. Lots of calories but who cares, it's so gooey delicious. Substitute brie, if you like.

Ingredients:

1 box camembert
2 cloves garlic
1 sprig fresh rosemary
Olive oil (preferably extra virgin)
4 oz grated parmesan
16 oz rigatone
6 oz fresh spinach
Salt and pepper
Directions:
  1. Preheat oven to 350

  2. Unwrap cheese then place it back in its wooden container

  3. Score a circle in the top of the skin then lift off the skin and discard it.

  4. Peel and slice the garlic

  5. Picke the leaves off the sprig of rosemary

  6. Lay the garlic on the cheese, sprinkle with pepper and drizzle with a little of the olive oil

  7. Sprinkle the rosemary leaves over the cheese and pat them down into the oil

  8. Put the box of cheese on a baking tray and bake for 25 mins, 'til golden and melted

  9. Meanwhile, bring a pot of water to the boil

  10. When your cheese has 10 minutes left to cook, add the rigatone to the boiling water and cook according to the package direction.

  11. Before draining the pasta, add the spinach to the pot for 10 seconds (NOTE: Keep a little of the cooking water. You may need it later)

  12. Drain the pasta and spinach then drizzle with the remaining olive oil and add the parmesan. If the sauce is too thick, add a little of the reserved cooking water to thin it out

  13. Season with salt and pepper and stir

  14. Remove the cheese from the oven

  15. To serve, divide the pasta between your bowls and drizzle the melted camembert on top or put the box on the table and let everyone help themselves.
