Ingredients:

1 lb ground beef (low fat content)
16 oz package frozen puff pastry
1 large egg
1 med onion
1 carrot
1 stick celery
1 med potato
2 cloves garlic
2 med portobello mushrooms
2-3 oz frozen peas
4 sprigs fresh rosemary
Olive oil
Plain flour, for dusting
Salt and pepper
Directions:
  1. Preheat oven to 350F.

  2. Peel and chop onion, carrot, celery and potato.

  3. Grate the garlic.

  4. Roughly chop the mushrooms.

  5. Saute all veg on medium heat in a large frying pan with olive oil.

  6. Chop the rosemary leaves and add to the pan.

  7. Fry and stir 'til veg softens (about 8 mins).

  8. Add frozen peas then put veg in a bowl to cool completely.

  9. Beat the egg in a separate bowl.

  10. Add the beef to the veg with half the egg and a little salt and pepper and scrunch the mix together well.

  11. Roll out the puff pastry on a floured surface to about 1/8" thick and about the size of a jelly roll pan.

  12. Brush the edges with a little beaten egg.

  13. Place the meat mix along one of the long edges of the pastry.

  14. Roll the pastry around the meat to form a sausage shape, squeezing the edges of the pastry together.

  15. Brush all over with the rest of the beaten egg.

  16. Put the Wellington on a floured baking tray and bake for about an hour until golden brown.

  17. Serve as it is or with a simple wine sauce or gravy.
