Ingredients:

2 trout fillets, boned but with skin on
2 tsp dijon-style mustard
2 handfuls plain oats (not quick oats)
1 lemon
Seasoning
Directions:
  1. Oil a baking tray and place the trout fillets on it, skin side down.

  2. Season with salt and pepper and spread the mustard over the fillets.

  3. Put the oats in a bowl and drizzle olive oil over them, enough to lightly coat the oats when tossed.

  4. Sprinkle the oats over the fish and pat them down.

  5. Add a little more olive oil if necessary.

  6. Cook under the broiler on high for about 10 minutes. The oats should be golden brown and the fish cooked through.

  7. Serve with the lemon for squeezing.
