Description: Another simple, inexpensive but impressive dish from Jamie Oliver's "Ministry of Food". Use apples or pears instead of the bananas, if you like.

Ingredients:
4 large bananas
Package puff pastry
2 oz unsalted butter
5 oz superfine sugar
1/4 tsp ground cinnamon
1 orange
plain flour for dusting
Directions:
Preheat oven to 350F.
Cut butter into cubes and put in a deep-sided baking dish, about 10" x 12".
Put the tray over a low heat to melt the butter, then add the sugar and cook, stirring occasionally, 'til golden and caramelized.
Meanwhile, peel the bananas and slice lengthwise. Lay them on the golden caramel.
Remove them from the heat and sprinkle the cinnamon over with half the grated zest from your orange.
Roll out your pastry on a floured surface. HINT: Start by placing the pastry on its side, rather than flat, as this will give you a lighter, crisper texture.
Roll the pastry to about the same size as your tray.
Lay the pastry on the tray, over the bananas, making sure they're well-covered with no gaps.
Prick the pastry a few times.
Place the tray at the top of the oven for 25-30 minutes or until golden.
When the tart is cooked, you must turn it out IMMEDIATELY, or it will stick. Carefully place your serving dish or a board over the tarte and flip it over so the bananas are on top. Be VERY CAREFUL when you do this as the hot caramel can burn you.
