Smoked Salmon and Gorgonzola Pasta
Description:
You could substitute plain salmon and blue cheese but it's the smoked salmon and gorgonzola that gives this dish its distinctively gourmet taste. Serve with asparagus in lemon butter and some fresh, hot Italian bread.

Ingredients:

16 oz of your favorite pasta
1 cup chopped smoked salmon
1/2 cup grated gorgonzola
1/2 cup crushed walnuts
2 tbsp butter
1/2 sweet onion, chopped
3/4 cup heavy cream
1/2 cup dry white wine
2 tbsp all purpose flour
1 tsp garlic powder
1 tsp dried basil
1 tsp dried thyme
1 tsp dried oregano

Directions:
  1. Melt the butter in a heavy saucepan

  2. Add the chopped onion and saute 'til opaque but not browned

  3. Add the flour and cook over a low heat, stirring constantly, for about 2 minutes, to make a roux. Do not let it brown

  4. Gradually add the cream and the wine, stirring vigorously with a whisk

  5. Let the mixture cook over a low to medium heat for about 10 minutes, stirring often, 'til thickened and beginning to boil

  6. While the mixture is cooking, add the garlic and herbs

  7. Now is also the time to start cooking the pasta according to the package directions

  8. When the mixture has thickened, turn the heat to low and stir in the cheese 'til it melts

  9. Add the smoked salmon and chopped walnuts

  10. Season with salt and pepper if desired

  11. Combine the cooked pasta with the cheese mix or spoon the mix over the pasta.

  12. Serve with wedges of lemon for squeezing

  13. NOTE: If the cheese mix is too thick, thin it down with a little extra wine. If the mix is not thick enough for you, add some parmesan cheese and bring the mix just back to a slow boil
