Creamy Smoked Bacon Pasta

I've done this recipe with mini shell pasta, which cooks in just 5 minutes. If you use a larger pasta, you'll need to add a few minutes to your cooking time. This is perfect with a simple green salad; a filling meal, inexpensive, too.

Ingredients:

About 1 lb smoked bacon, cut in strips
Handful of fresh mint leaves
4-5 oz grated parmesan
1 lb mini shell or other pasta
Little olive oil
1 oz butter
14-16 oz frozen peas
2 large dollops sour cream
Juice from 1/2 lemon
Seasoning
Directions:
Cook pasta according to package directions
Heat olive oil and butter in a pan and fry the bacon with a little pepper until crisp
Meanwhile, chop the mint leaves
When the bacon is cooked, add the peas and give the pan a good shake
After a minute or so add the sour cream and mint leaves
Add drained pasta to the pan
Drizzle the lemon juice over the pasta mix and stir for a minute or two 'til sauce is creamy
When everything's bubbling nicely, remove from the heat and stir in the parmesan
